Chocolate Cherry Chip Cookie Recipe
- 1 cup Maraschino Cherries
- 1/3 cup Olive Oil
- 1/3 cup Butter
- 1 Egg
- 2 1/4 cups All-purpose flour
- 1/4 tsp Almond extract
- 1 tsp Baking powder
- 3/4 cup Bittersweet chocolate chips
- 1 1/4 cup light brown sugar
If you find that you love this recipe, (I know I have) you might want to experiment with other variations!
- You can swap out the chocolate chips for white chocolate or even butterscotch chips!
- You might also feel like adding walnuts or pecans in the place of or in addition too the cherries!
DIRECTIONS
- Heat oven to 350°F.
- Set aside 2 cookie un-greased cookie sheets (you can line them with parchment paper if you prefer.)
- In a mixing bowl add oil, butter and sugar.
- Beat on low speed for 2-3 minutes, until fluffy.
- Add egg and almond extract
- Mix until combined.
- With a spatula, scrape the sides of the bowl and mix that into the dough.
- Gently, stir in the flour and baking powder.
- Turn mixer off and with a spatula, fold in cherries and chocolate chips.
- With a large ice-cream scoop, drop cookie dough on prepared baking sheets.
- Bake in preheated oven for 12-13 minutes or until edges are golden brown.
- Remove from oven and cool completely on baking sheets.
Note: The cookies will remain moist and delicious. it is recommended that you store the cookies in an airtight container for up to 1 week although ours never last that long!
